Hello Watkins Conciege Community!


My name is Shannel Brown. I have graciously been given an opportunity by Lucia Watkins to do a blog on healthy living. Throughout this blog you will learn more about my personal journey with clean eating, exercise, family, and what I do for a living.

This meal is a hit with my oldest child, Symphony. Symphony and I absolutely love 💗 Spanish food. So this is a healthy twist on Sofrito that you can add to just about any dish. That’s what makes this recipe so easy. You can make a big batch of Sofrito freeze whatever is left over, and take it out whenever you have a taste for it. One thing about this dish is you don’t have to worry about getting enough vegetables. It comes jam packed with all types of vitamins.

Sofrito


1 handful of fresh spinach 2 green bell peppers 1 orange bell pepper 1 yellow bell pepper 1 large yellow onion 1 Bunch of cilantro Some culantro if you can find it 2-3 garlic cloves Drizzle olive oil Salt to taste You can use cauliflower rice instead of grain rice. You can also add a simple side salad. Arugula, cucumbers, and tomatoes

Dressing: fresh squeezed lemon juice over the salad, drizzle with olive oil and salt and pepper to taste 15-30 minutes to prepare

30-45 minutes to prepare including salad
